Since we hosted this month’s Supper Club dinner, we wanted to make a cocktail to fit the shredded theme. I found this blended blue beverage and it was a hit!
This cocktail may look frosty, but it’s full of tropical flavors and a shredded coconut rim. It was tricky to get the coconut to stick to the rim – we used a little agave, but watered it down to thin it out a bit.
It was a nice, refreshing addition to our meal. Nothing outstanding, but good nonetheless.
Jack Frost Cocktail
1 cup pineapple juice
1/2 cup blue curaçao
1/2 cup light rum or vodka
1/2 cup cream of coconut
Blend (in blender) until slushy. Serve with flaked coconut rim.
