Ingredients
- 3 cups diced fresh tomatoes (about 2-3 large or 1 ½ pints grape/cherry tomatoes)
- ⅓ cup minced yellow onion
- ¼ cup minced cilantro
- 1 lime, zested and juiced
- 1 teaspoon kosher salt, divided
Instructions
- To a medium bowl add together diced tomatoes, minced onion, cilantro, and lime zest. Add 1 tablespoon of lime juice and the kosher salt and stir to combine.
- Taste for seasoning and add more lime juice and/or salt as needed. Serve right away or cover and refrigerate.
