    Turkey Sausage Patties

    Breakfast sausages don't need to be made from pork. Did you know that you can easily turn ground turkey into homemade turkey sausage patties? Just a few ingredients make this mix perfect for making homemade breakfast sausages without additives or ingredients you can't pronounce.

    I've been making homemade breakfast sausage patties for many years now. But until recently, I've only made them with ground pork or vegan ground meat substitute.

    Both are delicious, but I wanted to come up with a version that uses ground turkey. This recipe utilizes my DIY breakfast sausage seasoning, which has quickly become a favorite pantry staple!

    • Turkey sausage patties freeze beautifully, making them great for breakfast on the go.
    • Using a homemade sausage seasoning blend makes this recipe come together really quickly (though you can also measure out the seasonings individually, if you prefer).
    • You know exactly what's in your sausage patties - no preservatives, additives, or ingredients you can't pronounce.

    📝 Ingredients

    Here's everything you need to make turkey sausage patties (see recipe card below for ingredient amounts and full directions):

    • Ground turkey
    • Sausage seasoning - my breakfast sausage seasoning blend is perfect here, but you can feel free to use the spices listed in this post about breakfast sausage patties and 2 cloves of minced garlic instead.
    • High-heat cooking oil or cooking spray - I use a little oil if frying these in a skillet, or a spritz the tray if cooking them in an air fryer.

    ✅ How to make this recipe

    1. Mix together ground turkey and sausage seasoning.
    2. Form into patties.
    3. Heat oil in a skillet, or preheat an air fryer. Cook the patties, flipping halfway through, until fully cooked.

    📌 Tips

    Ground turkey is cooked when it hits an internal temperature of 165°F (an instant-read thermometer is perfect for checking this).

    If your sausage patties aren't cooking through, cover the skillet with a lid and lower the heat a bit until they're fully cooked. You can add a splash of water if you're concerned about the meat burning on the bottom.

    If you don't have a batch of breakfast sausage seasoning, you can use the individual spices listed in my homemade breakfast sausage patties post (along with the 2 cloves of minced garlic) instead.

    I like to place wax paper or parchment on a tray and put the raw patties on there. Once you remove the raw meat, you can throw out the paper and you'll have a clean tray to pile your cooked sausage patties onto.

    Don't crowd the pan! You'll likely need to work in batches with this recipe to prevent the patties from sticking together.

    Tips for forming the sausage patties:

    • Wet your hands with cold water to help prevent the meat mixture from sticking to your hands as you form the patties.
    • Using a scoop will help make all of your patties a consistent size, which will help them cook evenly. I like using a #30 scoop.
    • The flatter you make the patties, the more quickly they'll cook.

    💡 What to serve with turkey sausage patties

    These sausage patties are great as a side for eggs prepared your favorite way. They're also great tucked inside your favorite breakfast sandwich, or alongside pancakes or waffles.

    Description

    You can easily turn ground turkey into turkey sausage patties. This homemade mix is perfect for making breakfast sausages with no additives.


    Ingredients

    Units Scale
    • 1 pound ground turkey
    • 2 tablespoons breakfast sausage seasoning (see notes)
    • 1 tablespoon high heat cooking oil (if pan frying), or cooking spray (if air frying)

    Instructions

    1. In a medium bowl, mix together ground meat and breakfast sausage seasoning with your hands, being careful not to overmix.
    2. Heat oil in a large nonstick skillet over medium heat, or preheat your air fryer to 400°F.
    3. While the oil is heating, form the sausage mixture into 12 patties (see notes below for tips).
    4. For pan frying: once the oil is hot, transfer patties to the skillet and fry, flipping as needed, until both sides are browned and the meat is cooked through, about 10-12 minutes total, depending on the thickness of your patties.
    5. For air frying: once the air fryer is preheated, spray the tray with cooking spray and place patties in a single layer, making sure there's empty space in between the patties so they don't stick together. Cook for 5 minutes, flip them over, and continue cooking until they're cooked through, about 3 minutes.

    Notes
