    Potluck: 3 Bean Salad

    3 Bean Salad

    I needed a simple dish to bring to a potluck for moms and babies, so I opted to make this awesome 3 Bean Salad again. I cut the dressing ingredients down by half, because it makes more than enough for the amount of beans. I really like the sweetness of this salad - it mellows out the onions nicely.

    Ingredients

    Units Scale
    • 1 can green beans
    • 1 can wax beans
    • 1 can kidney beans
    • ½ cup chopped onions
    • ½ cup chopped green pepper

    Dressing

    • ¼ cup salad oil
    • ¼ cup red wine vinegar
    • ⅓ cup sugar
    • ½ tsp. of salt

    Instructions

    1. Drain the beans and mix together with the onions and peppers.
    2. Prepare the dressing in a separate bowl or jar.
    3. Toss everything together and refrigerate, covered.

      You're right, three-bean salad is sooo good. I got addicted to it when I was toting lunches to work and wanted something more healthful, portable, and delicious. This wins on all counts for me.

      I want to make the bean salad for Mother's Day. I'm hosting both sides of the family for a cookout. Do you think the recipe will work with frozen beans that are partially cooked?

        Hey Lauren! I'm really not sure - I've never worked with frozen beans before. But there's definitely a thread over on the CLBB that I started when I was searching for a bean salad recipe - maybe post your question in there?
