Potluck: 3 Bean Salad

3 Bean Salad

I needed a simple dish to bring to a potluck for moms and babies, so I opted to make this awesome 3 Bean Salad again. I cut the dressing ingredients down by half, because it makes more than enough for the amount of beans. I really like the sweetness of this salad – it mellows out the onions nicely.

3 Bean Salad

1 can green beans
1 can wax beans
1 can kidney beans
1/2 cup chopped onions
1/2 cup chopped green pepper

Dressing
1/4 cup salad oil
1/4 cup red wine vinegar
1/3 cup sugar
1/2 tsp. of salt

Drain the beans and mix together with the onions and peppers. Prepare the dressing in a separate bowl or jar. Toss everything together and refrigerate, covered.

    You’re right, three-bean salad is sooo good. I got addicted to it when I was toting lunches to work and wanted something more healthful, portable, and delicious. This wins on all counts for me.

    I want to make the bean salad for Mother’s Day. I’m hosting both sides of the family for a cookout. Do you think the recipe will work with frozen beans that are partially cooked?

      Hey Lauren! I’m really not sure – I’ve never worked with frozen beans before. But there’s definitely a thread over on the CLBB that I started when I was searching for a bean salad recipe – maybe post your question in there?
