    We took the day off work today, and Dino made an awesome brunch! We had seen Eggs Oscar at a local diner, so he decided to make them, plus mimosas. Dee-licious!

    Description

    We love grabbing this meal at the local diner so of course we had to recreate it at home!


    Ingredients

    Scale

    4 slices Canadian bacon, pan-fried

    12 spears asparagus, trimmed, then pan-fried and steamed

    4 English muffin halves, toasted

    4 eggs, poached

    Hollandaise sauce mix, prepared according to package directions


    Instructions

    Assemble by placing the English muffin halves on a plate, top with Canadian bacon, asparagus spears, and egg.

    Drape Hollandaise sauce over top. Enjoy!
