Creamy Tomato One Pot Pasta

Quick-cooking meals that only use one pot or pan are so great to keep in your weeknight cooking arsenal. This pasta was quick and delicious, and so creamy, you’d never guess it was healthy! I love the texture of whole grain pasta, and it really holds onto the sauce well in this dish.

It was a nice, simple meal that packed a lot of flavor, and my whole family really enjoyed it. I’ll definitely be making it again!

Ingredients

  • 12-ounces whole grain fettuccine or linguine
  • 2 cups water
  • 2 cups vegetable broth
  • 1 large onion, sliced
  • ½-cup fresh basil leaves
  • 3 garlic cloves, minced
  • salt and fresh ground pepper, to taste
  • 3-ounces ? Less-Fat Cream Cheese
  • 1-1/2 cups tomato/pasta sauce
  • ¼-cup grated parmesan cheese, or to taste

Instructions

  1. In a stockpot, combine pasta, water, vegetable broth, onions, basil leaves, garlic, salt and pepper.
  2. Cover, cook over medium-high heat and bring to a boil.
  3. Remove cover and continue to cook for 10 to 12 minutes, or until pasta is cooked and almost all liquid is absorbed; stirring occasionally.
  4. Remove from heat and stir in cream cheese and tomato sauce; mix until combined.
  5. Stir in grated parmesan cheese; taste for seasonings and adjust accordingly.
  6. Serve immediately.
