Apple, Avocado, Cucumber Kale Smoothie

It’s been a while since I made a post-workout smoothie, and since I had some kale in the fridge, I figured it was time to fire up the Vitamix again :). This one turned out pretty nicely – a little on the thick side since I used a whole avocado, but a little more coconut water would have solved that.

1 cup ice
Coconut water
1 apple, cored and roughly chopped
1 avocado
1/2 cup cucumber, roughly chopped
2 cups (lightly packed) kale, roughly chopped
1 tablespoon flax seeds
1 tablespoon raw blue agave

Put ice in a measuring cup. Pour in coconut water until it reaches the 1 cup line. Pour into blender, along with the rest of the ingredients. Blend until smooth. Enjoy!

  • Any idea what the nutritional facts are on this shake? I have to watch carbs, sugars, fibers, and protein counts…just wondering….

    • I don’t have that info handy for this smoothie, but an app that I found handy back when I had Gestational Diabetes for counting nutritional info is Calorie King. They have a huge database and you can look up the individual ingredients for recipes like this if you want. Hope that’s helpful, and best of luck!
