    Crispy roasted potatoes with rosemary.

To go along with the roast chicken, I made The Pioneer Woman's Crash Hot Potatoes again. These are easy and tasty, and they get nice and crispy on top. These aren't my favorite potato recipe, but they're nice and simple, and they're the recipe that gets the most traffic on this blog.

Been wanting to make these......so scrumptious looking. Had cooked fresh green beans and new potatoes with onions and salt pork earlier. So, it occurred to me that I could turn the leftover potatoes, having soaked up the chicken broth and other flavor goodness, to make me some wonderful potatoes. I snipped several branches of fresh rosemary and layer on top before popping them into the oven. When they were done and being served, I sprinkled fresh minced chives on top.........so good. Thanks, Pioneer Woman!!

That's so funny - I just bought salt pork for the first time today for a dish I plan to make over the weekend.
