Dino's parents got him a gas grill for his first Father's Day. It was delivered on Friday, and we just couldn't wait until Sunday to break it in, so I picked up a big swordfish steak from the Farmers' Market. It was our first time grilling swordfish, and our first time using cedar planks. The cedar gave it a really nice flavor - but it's really potent. Not something I'd want too often.
I soaked the plank in beer for an hour and then drizzled some olive oil on one side of it and sprinkled it with salt. I cut the swordfish into two pieces and put it on top. I drizzled more olive oil on top, added salt and pepper, some fresh thyme and lemon slices. Dino cooked them on the grill until they were perfectly flaky.
We also had some grilled asparagus (he put them in foil packets with a soy/teriyaki/ginger/honey mixture poured over them), and grilled orange bell peppers. It was a great meal!

Hey Ashely, Just searching recipies and came across yours! We're grilling swordfish tonight on a cedar plank so I was plesantly surprised to see your recipie pop up! And I have lemons and a thyme plant out front. Plus I also happened to buy asparagus and orange bell pepper! The stars align. That's too funny! It's been a very long time since I made this one (so long ago that I had the year on my watermark - 2012!!). We actually grilled tonight also - I hope you enjoyed your meal, Alexis!

Hi LouAnn - thanks for the comment! This is a post from waaaay back in 2012, and I was experimenting with cooking seafood on the grill. I didn't do the actual grilling, just the prep, which is described above.
I've been working on combing through older recipes and updating posts like this when it makes sense in order to make them more helpful. I'll add this one to the list. Are there any specific questions you have about cooking fish on the grill? And is swordfish specifically one that you're interested in? I'd be happy to do some experimentation with it over the summer.
