I used to hate seafood. Especially the smell of canned tuna. But I’ve been getting better, and Dino makes really good tuna salad sandwiches. I tried to track what he put in them, to get a basic recipe together, and this is what I came up with.
Tuna Salad Sandwiches
1 can solid white albacore tuna, flaked with a fork or potato masher
3 cornichons, chopped
3 sweet gherkins, chopped
1/4 small red onion, chopped (or a little dry minced onion)
1 stalk celery, chopped (or a pinch of celery seed)
a pinch of ground mustard
a pinch of cayenne pepper
a big pinch of ground white pepper
salt & black pepper to taste
sliced bread (toasted or plain)*
lettuce or baby spinach
*Optional: use Gluten Free
Mix ingredients through salt & black pepper in a bowl using a fork or potato masher. Scoop onto to bread, top with lettuce or spinach, and enjoy!
