Frozen Peanut Butter Pie

For tonight’s birthday party dessert, I went with one of our favorite, no-bake desserts – Frozen Peanut Butter Pie. This pie is so rich and decadent, and it’s a great way to cool down on a hot summer night. I was able to find a chocolate cookie pie crust this time around, and I used low-fat Neufchatel cheese instead of regular cream cheese. You know, to make it healthy-ish. Ahem. Anyhow – I highly recommend this dessert for any peanut butter lover out there. And even if you don’t love it, maybe this pie will convert you!

Beat cream in medium bowl to soft peaks. Fold cream into peanut butter mixture in 2 additions. Spoon peanut butter filling into crust and smooth top. Freeze pie until filling is firm, at least 3 hours. (Can be prepared 1 week ahead. Cover and keep frozen. Let stand room temperature 20 minutes before serving.)
