Description
This easy cilantro lime rice recipe is the perfect, vibrant side dish to go with your favorite Mexican-inspired meals. Quick and delicious!

- 2 tablespoons olive oil, divided
- 1 cup basmati rice
- 3 cloves garlic, minced
- 1 1/2 cups plus 2 tablespoons water, divided
- 1/2 teaspoon kosher salt
- 3/4 cup lightly packed fresh cilantro leaves
- 2 tablespoons fresh lime juice
Instructions
- To a medium saucepan set over medium heat, add 1 tablespoon of the olive oil. Once warm, add the rice and sauté, stirring occasionally, until the rice starts to toast a little bit, about 2 minutes. Add minced garlic and continue to sauté, stirring, for another minute.
- Add 1 1/2 cups of water and the salt. Raise the heat to high and bring to a boil.
- Once the water is boiling, cover the saucepan and reduce the heat to low. Cook, covered, until the water is absorbed and the rice is just tender, about 16 to 18 minutes.
- Meanwhile, in a blender or food processor, combine cilantro, lime juice, remaining tablespoon of olive garlic, and 2 tablespoons water; blend until smooth.
- Stir the cilantro mixture into the cooked rice and enjoy!
Notes
I like using an immersion blender to make the cilantro lime purée.
