Method
- Line a baking sheet with a silicone baking mat, parchment paper, or wax paper.
- Place butterscotch chips and peanut butter In a large, microwave-safe bowl. Microwave in 30-second increments, stirring after each increment, until fully melted and smooth, about 2 minutes total.
- Add chow mein noodles and peanuts and stir gently until everything is coated with the butterscotch mixture.
- Drop mixture by forkfuls onto lined pans while it's still warm. Let sit until solidified (you can transfer them to the refrigerator, if desired, to speed up the process).
Notes
If you don't want to use a microwave, you could melt the butterscotch chips and peanut butter together on the stovetop over a double boiler instead.
