- 4 plum tomatoes, chopped
- 2 ears corn, kernels cut off
- 1 small yellow onion, diced
- 1/2 cup cilantro, chopped
- 1 lime, zested and juiced (about 2 tablespoons of juice)
- a few dashes of hot sauce (or minced jalapeño, a sprinkle of cayenne pepper or chili powder)
- pinch of kosher salt
Instructions
- Mix all of the ingredients in a bowl and refrigerate, covered, for at least an hour, so the flavors can mingle.
