Yellow Tomato, Avocado and Cucumber Salad with Fig Balsamic

I wanted to make a quick salad for lunch today, so I put this together with some of the produce that I had on hand. I mixed some halved sweet yellow tomatoes, chopped avocado and cucumber, thinly sliced yellow onion in a bowl. I drizzled some good quality extra-virgin olive oil and my favorite Fig Balsamic Vinegar on top, sprinkled on some sea salt and freshly cracked black pepper and topped it with some chopped parsley. This was a light and colorful salad that was surprisingly filling. I enjoyed it while sitting at my new desk in our newly remodeled studio!

    Ooo I didn’t know you guys remodelled! How fun! I love the sound of this salad. The fig balsamic would really do it for me.

      Yes! Well, the room is almost finished. We customized new desks and storage and it looks great! I’m going to post before/after photos when it’s all done. Woohoo!
