I made a nice, quick raw salad for lunch today to use up some of the veggies that I had in the house. I juiced half a lime in the bottom of a bowl, added a pinch of sea salt and some freshly cracked black pepper, and then whisked in a stream of a really nice extra-virgin olive oil. I dropped in some sliced radishes, chopped tomato, cucumber, and parsley and tossed to combine. It was nice and fresh, and the peppery kick from the radishes was great!
