New Year’s Eve Tapas Party: Spinach with Chickpeas

This was the first recipe I found when looking for vegetarian tapas recipes. It ended up being the star of the party! The spices are so wonderful, and the sweetness from the golden raisins go perfectly with the spinach. The chickpeas make it a little heartier, which is great when you’re eating meat-free. This was another make-ahead recipe for our holiday get together. Cream sherry is something that I bought yeeeeeears ago to make Spice-Rubbed Cornish Hens with Haroseth Stuffing and Sherry Jus (which turned out AWESOME!) for my Supper Club and I don’t think I’ve used it since. New Year’s Eve Tapas Party: Spanish Spiced Almonds

I love any excuse to have friends over, eat good food, and especially do all of it around a theme. So, for New Year’s Eve this year, we had some friends over. They also have a baby, so we figured that rather than finding babysitters on the most expensive night of the year, we’d stay in and have a small scale celebration at our home. Now, I also love a challenge, and these friends presented one – they’re vegetarians, and one of them is currently avoiding dairy, due to a potential allergy with her baby, who is still nursing. We came up with Tapas as a theme, and maaaaaan was it a challenge for me to steer clear of chorizo and manchego cheese ;). Continue Reading →
