Green and Orange Smoothie

Green and Orange Smoothie

It has been way too long since I’ve made a smoothie. I blame the horrid winter weather we’ve been having for the last few months. I mean, there are only so many “polar vortices” that one can take before willing warmer weather to come back to the East Coast in the form of cold, blended beverages. Rum optional. Tomatillo Pico de Gallo

Tomatillo Pico de Gallo

To go with our Cilantro and Lime Fish Tacos with Cilantro and Lime Crema for New Year’s Eve, I made this pico de gallo. It’s pretty easy to put together, but you need to toast some cumin seeds and grind them as well as clean and seed some tomatillos. Continue Reading →

Mango, Banana, Chia Kale Smoothie

Mango, Banana, Chia Kale Smoothie

After a morning yoga session and trip to the Farmers Market, I decided that I was overdo for a kale-filled smoothie. This one really hit the spot – the mango and banana made it perfectly sweet without any additional honey/sugar/agave, and the chia seeds give this green beauty a big boost of omega-3, antioxidants, fiber and vitamins. Ruby Radiance Juice

Ruby Radiance Juice

We haven’t made as much fresh juice as we usually do this summer, so we decided to raid the fridge and put something together. I had plans for the greens from a bunch of beets, but didn’t know what I was going to do with the actual beets yet, so we used that as the base. This juice is jam-packed with nutrients, and is bursting with freshness. Continue Reading →

Raw Sweet Corn and Tomato Salsa

Raw Sweet Corn and Tomato Salsa

I wanted to make a salsa with some of the things I had hanging out in the fridge to go with tonight’s dinner. I love how sweet fresh corn is this time of year – so good that you can eat it raw. So I combined it with some tomatoes and a few other things for a nice, refreshing salsa. Continue Reading →

Avocado, Tomato & Cilantro Salad with Lime

Avocado, Tomato & Cilantro Salad with Lime

I had a lot of work to catch up on while my son was napping today, so I threw together a quick and tasty raw salad for lunch. I mixed an avocado, a tomato and some cilantro in a bowl and squeezed the juice of half a lime over top, drizzled it with a nice olive oil, sea salt and freshly cracked black pepper. It was nice and cool and refreshing, and it came together in a snap! Continue Reading →

Creamy Avocado Dressing

Creamy Avocado Dressing

The avocados at the store this week were pretty sad. They were all rock hard, and I didn’t want to wait for them to ripen. But then I noticed that the bags of avocados were in better shape, so I picked one up. The first thing I did with them was to make this dressing Continue Reading →

Easy Overnight Oatmeal Chia Breakfast Pudding

Easy Overnight Oatmeal Chia Breakfast Pudding

I finally found chia seeds a few weeks ago, and wasn’t sure how I’d use them for the first time. There are so many great options out there. They are full of health benefits, and don’t have to be ground up the way flax seeds to for your body to be able to absorb them. So when I came across this simple breakfast recipe that could be prepared the night before, I knew it would be the perfect way to get acquainted to chia seeds. Continue Reading →

Avocado & Strawberry Salad with Balsamic-Lime Vinaigrette

Avocado & Strawberry Salad with Balsamic-Lime Vinaigrette

I had an avocado that I needed to use, so I decided to put together this light salad for lunch. The sweetness of the strawberry was great against the creamy, perfectly ripe avocado, and the lime and balsamic added a nice acidity. I used some purple basil from my garden, and it was fantastic! If you want to keep this dish raw, skip the balsamic – it will still be really tasty! Continue Reading →

Raw Vegan Pad Thai

Raw Vegan Pad Thai

Some friends of ours came over to babysit while Dino and I went out to dinner to celebrate our anniversary. They’re newly vegan, and I wanted to make some dinner for them to enjoy while watching our rambunctious toddler. I love pad thai, but I always figured that fish sauce was key to making it great. I also would have never thought to make it raw! So when I saw that combination, I knew it would be a fun one to try out. And this recipe says it tastes better after it sits in the fridge overnight. Perfect! I decided to make it the day before, and then QC some for lunch before they came over. Win/win! Continue Reading →

Raw Carrot Avocado Soup

Raw Carrot Avocado Soup

I’ve been trying to incorporate more raw food into our diet. It’s especially tempting now that the weather is starting to warm up. The thought of preparing a meal without heating up the kitchen is very enticing. I find that a lot of raw recipes are smoothies and salads, but I wanted to look into doing more substantial. I’ve stumbled upon several really inspiring raw food websites, and this soup recipe looked bright and sunny and delicious. Plus, it uses a lot of produce that I tend to have on hand, which is always a bonus. Continue Reading →
