I made this meal out of the current issue of Cooking Light hoping that the combination of ingredients would work well. It sounded weird, but just weird enough to maybe be great! It has a lot of components but they’re all really fresh and tasty. It tasted better than I had hoped – there are a lot of different flavors going on. You have sweet from the grapes, tang from the vinegar and capers, salty feta, and juicy tomatoes. The only change I made was to use fresh garlic. Farmers’ Market season is finally here, and I love having fun new produce to try out in salads. I got some mizuna – a green that was totally new to me – and radishes from one of the stands, and made a nice salad with them. I added some avocado, orange and yellow tomatoes, red onion, fleur de sal, freshly ground black pepper, aged balsamic and an awesome olive oil. This soup was really easy to put together, and with the addition of a little ground white pepper, it was great! Definitely go for the truffle oil or salt if you want this to be special. I picked this recipe out from Rachael Ray’s website because I wanted to make something in my pressure cooker this week. I didn’t realize that I had made it before until I got home and uploaded my photos. We rated it 4 stars both times, so hey…consistency is key! It’s really flavorful, and it’s great to make on a weeknight if you do it in a pressure cooker. I only simmered it for 20-25 minutes and it tasted like it was cooking all day! Yum! I made a side salad tonight with some produce I had in the house. I used baby spinach, carrot, daikon, avocado, chives, grape tomatoes, lemon infused olive oil and aged balsamic with a sprinkle of fleur de sal and a little freshly ground black pepper.
