    Quick Sweet and Sour Cucumber Salad

    I needed a quick side to go with the Baked Chicken Nuggets, so I decided to try to make a quick cucumber salad (a la the ones I love at Thai restaurants). It turned out really good! Not the best I've ever had, but really good and super easy for a quick-thinking side dish.

    Small bowls of sliced cucumbers and green onions.

    In a medium bowl, whisk together 3T seasoned rice wine vinegar, 1T mirin, 1T honey and a healthy pinch of red pepper flakes. Add in one thinly sliced seedless cucumber and 2 thinly sliced scallions (or a bit of sliced red onion or shallot). Toss together and enjoy!
