    Quick Cucumber Salad

    We got some garden cucumbers from a family friend, and I decided to make a quick side salad to go with the leftover Bourbon-Mango Pulled Pork. I took about a tablespoon of honey, 2-3 tablespoons of seasoned rice wine vinegar, ½ teaspoon of sesame oil, and a pinch of kosher salt and whisked it together in a bowl. I added some thick sliced cucumber and thinly sliced shallot and tossed it together. It was light and refreshing, and a good way to cool your mouth off after a spicy sandwich!

      This looks delicious. Looks fresh, healthy and too.

      I finally tried my hand at making fresh pickles with some cukes I picked up from the farmer's market. I love cucumbers and in the Summer they are even better.
