
Pickled Beets & Eggs
Remember last week when I made Pickled Beets and Eggs? Well, they were finally ready, and I was excited to see how they turned out. They were tangy and delicious! I’m glad I gave it a shot at home. This will be a nice treat to keep in the fridge for a few weeks!

I would enjoy the pickle beets. The pickled eggs? That too, because I have no doubt that you made them delicious. To date, I have never had a an egg that was pickled.

My mom always pickled beets in season, then added eggs to them as she opened them throughout the year and they were a regular feature for lunch – we came home from school for lunch. I always preferred the eggs to the beets and still do.

My kids would turn up there nose at beets but I love them pickled and with eggs is even better. Thanks for the reminder of how good and pretty this combination is.
