When I made Butternut Squash Gnocchi with Whiskey Cream Sauce, the only squash I could find were huge, so I roasted the whole thing and saved half of it in the fridge. I decided that it would be nice to mash it up with some honey, fresh rosemary, orange zest and a little freshly grated nutmeg. I topped it with a few orange slices for a bit of a hot/cool sensation. I enjoyed the flavors, but it definitely needs some work in order to be repeat worthy in my house.
