I had a little bit of pork roast left that I wanted to use up tonight. I came across this super easy recipe, and I had all of the ingredients to make it happen!
I wish I would have thought to cut the rub recipe in half, because I only had 2 pork chops, and I pressed them down into the rub on a plate to adhere it. D'oh!
Anyhow, this dry rub smells amazing, and it's super easy to put together. Definitely a good one to have in your weeknight dinner arsenal. I served this with Sweet Pea Pot Stickers.
Mom’s Perfect Pork Chops
- Yield: 4-6 Servings 1x

- 4 pork chops
- 1 teaspoon bacon fat, grapeseed oil, or olive oil (or other high smoke point oil)
- Salt
- 1-2 teaspoons of dry rub*
- *Dad's dry rub:
- ¼ cup cumin seeds
- 3 Tbsp whole black peppercorns
- 1 Tbsp coriander seeds
- 2 Tbsp sugar
- 1 ½ teaspoons sea salt
