Grilled Tofu with Ginger-Nectarine Salsa

I had a bunch of leftover salsa from a few nights ago, so I decided to grill up some tofu to try it out as a vegetarian meal. Wow! It was wonderful left over – the raisins plumped up from marinating in the fruit juices for a few days, and the flavors really mingled together nicely. I served it on top of jasmine rice. This is a great way to use fresh summer produce in a satisfying meatless meal.
