
Gingered Apple Slaw

This slaw was really easy to put together, and it was good, but nothing special. I usually like salads like this to have some yogurt mixed into the sauce, and I kept wanting it to be more like a waldorf type salad with raisins and nuts or sesame seeds. It was good, but nothing I’d plan to make again.
Gingered Apple Slaw

1/2 cup mayonnaise
1 1/2 teaspoons finely grated peeled fresh ginger
1 tablespoon seasoned rice vinegar
2 celery ribs, cut into matchsticks
4 apples, of different varieties, cored and cut into matchsticks
Stir together mayonnaise, ginger, and vinegar. Add celery and apples and gently toss to coat.
