Tomato Salad with Aged Balsamic and Fresh Herbs

Since we were having some pretty heavy food for dinner tonight (Pulled Pork Sandwiches and Mashed Potatoes with Gouda and Bacon), I decided to add a fresh and tangy salad on the side. I sliced up a few tomatoes and put them in a bowl with some thinly sliced shallots. I added some chopped green and purple basil, thyme, parsley and chives from my garden and sprinkled on some sea salt and freshly ground black pepper. I drizzled on some really good olive oil and aged balsamic, tossed it together and that was it! This stuff is great to dip some crusty bread into the juices at the bottom of the bowl. What a treat!
