This month we're taking taco night to the next level with taco-spiced, roasted sweet potatoes and black beans.
These vegan-friendly tacos are so flavorful that even meat-eaters will enjoy them.We'll serve them topped with a bright cilantro chimichurri and quick-pickled red onions.
We'll also be making a delicious restaurant-style guacamole to enjoy alongside.
