I wanted a nice, low maintenance vegetarian meal, and I remembered these Eggplant Steaks with Parmesan Peas that I made a while back. These were great again. We really like the simplicity of this meal, and it packs a lot of flavor, even though there are only a few ingredients. I have to remember to make the peas more often as an easy side dish to other meals, and I still want to try out some of the variations that are listed over at Stone Soup.
