I like making corned beef and cabbage once a year and only once. It’s often enough for me to eat it and still enjoy it. I found this recipe 3 years ago and it’s been a St. Patrick’s Day tradition ever since. This year I made mashed potatoes to go with it, and as always, served some spicy mustard alongside.
Slow-Cooker Corned Beef and Cabbage

4 ½ lbs corned beef
2 onions, quartered
1 head cabbage, in small wedges
½ teaspoon pepper
3 tablespoons vinegar
3 tablespoons sugar
2 cups water
Combine ingredients in slow cooker with cabbage on top. Cut meat to fit, if
necessary. Cover and cook on low 10-12 hours; high 6-7 hours or auto 6-8
hours.

I make my corned beef in the crockpot too – so much easier! This year I cooked the beef in the crockpot and braised the cabbage separately in the oven.

I guess I need to break down and make a real corned beef. The only CB I’ve ever tried was out of a can as a kid! LOL

I think I might like the cabbage separate better. It wilts down so much, and I really like mine greener. But the meat just melts!
