So when we were having some friends over for a Sunday night card game, I wanted to have some tasty snacks. My friend Lauren loves spinach dip, but it’s usually the kind that comes in a jar and has ingredients that aren’t so easy to pronounce. That’s when I decided to look for a lightened up version, and Gina over at Skinnytaste had just the recipe for me!
This dip was a big hit with our friends! I really enjoyed it. Don’t get me wrong – it’s not quite as rich and delicious as the regular stuff, but it’s very tasty, and you don’t have to feel guilty about going in for more (and more and more and more…).
I think next time I’ll add some chopped water chestnuts because I really like the texture that they add.
This dip came together really quickly for an impressive appetizer!
Creamy Parmesan Spinach Dip

Servings: 8 • Serving Size: 1/4 cup • Old Points: 2 pts • Points+: 2 pts

10 oz frozen chopped spinach, thawed and excess liquid squeezed out
1/2 cup light sour cream
5 tbsp light mayonnaise
1/3 cup Parmigiano Reggiano
1/4 cup scallion, chopped
fresh pepper to taste
Combine all the ingredients in a medium bowl. Can be made one day in advance and stored in the refrigerator. Remove from refrigerator 30 minutes before serving. Makes about 2 cups.
