  • 1 cup uncooked quinoa, rinsed and drained
  • 1/2 cup plain hummus
  • 1/4 cup chopped fresh dill
  • 1/4 cup diced red onion
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons sliced pitted kalamata olives
  • 1 1/2 teaspoons olive oil
  • 3/8 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 ounces feta cheese, crumbled (about 1/2 cup)
  • 8 large collard green leaves (about 8 ounces)
  • 2 cups chopped English cucumber (about 1 large)
  • 1 pint cherry tomatoes, quartered
