Chicken and Mixed Veggie Stir-Fry

I was all excited to celebrate Stir-Friday this week, but adventures in Toddlerhood got in the way, and I ended up making it on Saturday instead. I started off cooking some diced chicken in a cast iron skillet (I don’t have a wok, and I have an electric range, so it’s not worth it to get a wok), and then added in this awesome mix of stir-fry veggies that I got from Trader Joe’s. I made a few mistakes here – I made a sauce to throw in at the end, but it ended up being too salty, and I think I overcooked the rice noodles that I added to the mix. I’m also a wimp intimidated by cranking the heat ALL THE WAY UP on my stovetop, so it didn’t get that nice stir-fry effect. So… lesson learned… I will no longer make stir-fry dishes unless I can get myself to cook it on high heat so everything sears properly, or I will coerce Dino into cooking it for me after I’ve prepped all of the ingredients. 🙂
