I had a lot of work to catch up on while my son was napping today, so I threw together a quick and tasty raw salad for lunch. I mixed an avocado, a tomato and some cilantro in a bowl and squeezed the juice of half a lime over top, drizzled it with a nice olive oil, sea salt and freshly cracked black pepper. It was nice and cool and refreshing, and it came together in a snap!
