I had an avocado that I needed to use, so I decided to put together this light salad for lunch. The sweetness of the strawberry was great against the creamy, perfectly ripe avocado, and the lime and balsamic added a nice acidity. I used some purple basil from my garden, and it was fantastic! If you want to keep this dish raw, skip the balsamic - it will still be really tasty!
Avocado & Strawberry Salad with Balsamic-Lime Vinaigrette

Juice of ½ lime (if it's not a very juicy lime, juice the whole thing)
2 tablespoons high quality extra-virgin olive oil
1 teaspoon aged balsamic
1 avocado, peeled, pitted and diced
2-3 strawberries, stems removed, sliced
3 leaves purple basil, torn
Sea salt and freshly cracked black pepper, to taste
In a salad bowl, juice the lime. Add vinegar and stream in oil, whisking to combine. Add avocado and strawberries and toss gently to coat with the vinaigrette. Season with salt and pepper and tear basil leaves over top. Enjoy!
