
Smoky Tomatillo Chicken

Tonight’s dinner was great! I threw it together last night (I just put the chicken on the bottom and mixed the other stuff on top) so that it would be ready to take out of the fridge and let cook all day when I woke up this morning. It was my first time cooking with tomatillos and they were AWESOME! The only change I made was to use chipotle sauce, because the store didn’t have the actual peppers in whole form in a can. This was incredibly moist, and one of the best chicken dishes to come out of my slow cooker.
Smoky Tomatillo Chicken

15 tomatillos, shucked and crudely chopped
1 small onion chopped
2 chipotles in adobo sauce chopped
3 cloves garlic crushed
¼ cup brown sugar
1 ½ cup chicken broth
2 tablespoons dried oregano
4 skinless-boneless chicken breasts
Thoroughly mix all ingredients except for the chicken in your slow cooker. Add the chicken and spoon the tomatillo mixture over it. Cover and cook on low for 5-7 hours. Service with warm tortillas or over rice.
