My mom’s chicken salad recipe is my absolute favorite. It’s really simple and delicious. I usually add seasoned salt to the boiling water, and sometimes I throw in a bay leaf, too. It’s perfect on a sandwich for lunch. Yum!
3 boneless skinless chicken breasts, chopped
3 – 4 sweet pickles, diced
3 – 4 eggs, hard boiled, diced
½ white onion, diced
1 – 2 stalks celery, diced
Miracle Whip light
Boil chicken breast until cooked. Run under cold water to cool off. Pulse in food processor to chop. Add the rest of the ingredients, and enough Miracle Whip to bind. Refrigerate.
