
Chickpea and Walnut Burgers

These veggie burgers are different and really tasty! Dino made a chipotle mayonnaise (he added some of the adobo sauce) to go on them. They were awesome!
Chickpea and Walnut Burgers

1 large onion
2 tablespoons vegetable oil
1 teaspoon vegetable oil
1 clove garlic, crushed
½ cup almonds, chopped
½ cup walnuts, chopped
½ cup sunflower seeds, toasted
1 ½ 15 oz. cans chickpeas, canned, rinsed and drained
2 teaspoons curry powder
salt and pepper to taste
1 cup all purpose flour
2 eggs, lightly beaten
1 cup fine bread crumbs
Peel onions and chop in quarters. In food processor, finely chop.
Cook onion and garlic in medium fry pan over medium heat in 1 teaspoon oil, stirring occasionally until golden.
Meanwhile, in food processor, chop almonds, walnuts, and sunflower seeds until coarsely ground. Add cooked onion mixture, chickpeas, and curry powder; pulse until blended. Season to taste with salt and pepper.
Form mixture into 12 patties. Coat each in flour, then dip in beaten egg, then coat with breadcrumbs.
Heat remaining 2 T of oil in frying pan over medium heat until golden brown. Flip and cook on other side.
