Chewy Coconut Cookies

These cookies are so good! They almost taste like oatmeal for some reason. They’re really chewy and coconutty, and you can’t eat just one. I sent some in to work with Dino, and his coworkers devoured them. I’ll definitely be making these again!

Chewy Coconut Cookies

Chewy Coconut Cookies – N. Huff

1 ¼ cups flour
½ teaspoon soda
¼ teaspoon salt
½ cup unsalted butter
½ cup brown sugar
½ cup white sugar
1 egg
½ teaspoon vanilla
1 ⅓ cups coconut
Preheat oven to 350 degrees. Combine flour, baking soda, and salt in a bowl and set aside.

In another bowl cream butter and sugars until smooth. Beat in egg until and vanilla until light and fluffy. Gradually blend in flour mixture, them coconut.

Drop by spoonfuls onto an ungreased cookie sheet. Bake about 10-14 minutes. Cool.
