I recently discovered this post on Spabettie via Pinterest. Stuffing waffles? How had this never occurred to me before?! So when my friend Alexsis and her daughter came over today, we planned on making stuffed waffles. We were totally going to make the tomato cheese ones, but then I got to poking around on the site and saw one that featured kale. Gasp! It sounded amazing! I didn’t want to have to get a ton of stuff from the store that I was unsure if I could find (like xanthan gum), so I decided to improvise a bit. Continue Reading →

To send my parents off, we came up with an awesome idea – combining our love of Belgian waffles with our love of making the ever-amazing banana “ice cream” for breakfast. (If you haven’t seen it around the web yet, you can slice up ripe bananas, freeze them in a bag, and whenever you want ice cream, just pop some in a blender and you have a healthy, one ingredient, guilt-free ice cream!) Dino made some amazing Belgian waffles, threw some frozen bananas with a splash of soy milk into the blender, dusted them with powdered sugar, and voila! Breakfast was awesome! Topped with a bit of maple syrup, these are a fantastic breakfast idea – the cold and hot mixture is just great. Continue Reading →

Dino made these for breakfast today, and we really liked them! He was inspired to use some of the leftover Orange-Honey Butter from the biscuits I made a few days ago. So he took the waffle part of a recipe and we topped them with the butter and some maple syrup. They were really tasty, and super fluffy. We prefer our waffles to have a bit of crispiness on the outside, and these didn’t. Continue Reading →

This morning, Dino decided to make waffles a la Alton Brown. The only changes were that he used regular milk instead of buttermilk, and all white flour. We topped them with butter and syrup and they were delicious! They were very eggy and moist. We’ll definitely be making these again!! Kudos again, Mr. Brown! Continue Reading →
