I saw this post over at Gina’s Skinny Recipes and thought it looked like a wonderful, quick meal. It was super easy to put together – the most time consuming part was peeling the shrimp. You can buy them already peeled and deveined, but I find it’s less expensive to buy them split and deveined only, frozen. I made yet another winner from this cookbook tonight! I followed one of the tips and substituted shrimp for salmon. It was really tasty and not nearly as spicy as it sounds like it will be. My second recipe from this cookbook was a huge success! I used my pressure cooker so that it would be speedier, and it worked out beautifully! I cooked it for 30 minutes once it came to pressure and used the natural release method. It was a rich and hearty stew that was spicy but not too much so.
