I made a side salad tonight with some produce I had in the house. I used baby spinach, carrot, daikon, avocado, chives, grape tomatoes, lemon infused olive oil and aged balsamic with a sprinkle of fleur de sal and a little freshly ground black pepper. It was refreshing and tasty! Continue Reading →

After pigging out on snack foods all day yesterday, I decided that a hearty vegetarian dinner was the way to go. I had made this one before and we liked it just as much again today. It’s surprisingly satisfying, and with whole wheat pasta, it’s pretty healthy, too! Continue Reading →

Superbowl Party: Peanut Butter Haystacks

This recipe comes with two warnings: 1) it doesn’t make nearly enough and 2) if you decide to set them by placing them on cookie sheets in the cold winter air, even plastic wrap will not deter squirrels from eating several of them. I’m serious. They’re lucky they’re so cute – I was not happy to find little bite marks and missing pieces! Anyway, they’re divine and super easy, and they taste just like the ones my aunts always made when I was little. Woohoo! Continue Reading →

Sundried Tomato Kebabs

I came across this recipe and thought that it would be a great appetizer. It was! It’s really simple but the sun-dried tomatoes really make it special. I didn’t get the oil packed kind, so I just drizzled some extra-virgin olive oil on them afterward. My basil plants have been … Continue Reading →

These eggs were really tasty and different! I cut the recipe in half, and I think it was a little too runny. Next time, I’d add a little less mayo and yogurt so that it’d be thicker like the deviled eggs that I usually make. This would be great for an appetizer for a dinner party! Continue Reading →

This morning, I noticed that there were a few apples that needed to be used up. I decided to try to make an apple molasses compote as a topping for some pancakes and give Dino a break from being the weekend breakfast chef. It turned out really well. Sometimes the best recipes are put together with what you have laying around in your house! Continue Reading →

I made this ice cream as a surprise for Dino after band practice. It’s completely lactose free, and it’s reeeeally good. The banana flavor is wonderful, and the honey makes it nice and sweet. Mixing everything up in the blender is a snap (i only did it in one batch … Continue Reading →

Basil-Potato Frittata

Usually, Dino makes breakfast on weekends. He’s really good at it. But this morning (OK, early afternoon) I decided to give it a try. It was my first attempt at making a frittata, and it turned out GREAT! It had a lot of flavor, and the eggs were cooked perfectly. … Continue Reading →

Finnish Cockbull

I wanted to try out a new cocktail on Thursday night, so I picked one out of a book that looked simple, and that we had all of the ingredients for. They turned out okay, but VERY strong. I served them over ice to try to dilute the alcohol a … Continue Reading →
