I have been having a lot of luck “roasting” things in the slow cooker lately, so I thought I’d give “baking” a try! This worked pretty well, but I think the potatoes I used were a bit too large. I also think that maybe pricking them with a fork, the way you do when you bake them in the oven, would help. All I did was scrub the potatoes, put them each on their own piece of aluminum foil, sprinkled them with salt (next time I’ll drizzle them with a little olive oil first, too), wrap them tightly in the foil, and put them in the slow cooker on high for 6-8 hours. Since “roasting” beets in the slow cooker was such a success, I thought I’d try out “roasting” garlic. This worked out really well, too! The house smelled amazing while it was cooking away, and the garlic tasted just like it does when it roasts in the oven, but I didn’t have to heat up the house! Continue Reading →

I picked up a few bunches of beets from the Farmers Market yesterday, and while I knew what I wanted to do with the greens, I wasn’t 100% sure what I wanted to do with the actual beets. I knew I wanted to roast at least some of them, but the thought of heating up the oven for an hour or more really didn’t sound too appealing in the midst of this summer heat. Then I had an idea – what if I prepared them the same way as I would to roast them in the oven, but just put them in the slow cooker for a few hours on high instead? I recently tried wrapping salmon in foil and cooking it in the slow cooker, and it was fantastic, so why not give this a shot? Continue Reading →

When I saw this recipe for making wings in the slow cooker, I was intrigued. Especially since it has been so hot outside – I’m looking to minimize oven use any way I can lately. These were pretty easy to put together, but you need to be around to turn them a few times while they cook. Continue Reading →

A lot of people think that slow cookers are a wintertime luxury. As someone who doesn’t really have air conditioning that reaches the kitchen, I think that slow cookers are perfect for summertime cooking! You can have a nice, hot meal without heating up your kitchen, usually with minimal effort. I came across this recipe on a blog with one of the funniest names I’ve ever heard and knew I wanted to give it a try. Continue Reading →

Before I came across this recipe, I had never even entertained the idea of making seafood in the slow cooker. It never crossed my mind. I was skeptical… but I just had to try it out. I’m so glad I did! This turned out fantastically! This is sweet and spicy and super tasty. The salmon flaked apart as easily as if I had cooked it in the oven. Continue Reading →

I had picked up a beautiful piece of grass-fed beef short ribs from the Farmers’ Market a few weeks ago, and wanted to make something simple with it. So I found this recipe and thawed them out. This recipe took a bit of prep beforehand, which I usually try to avoid when I’m using the slow cooker, but this time around it seemed necessary. This turned out to be a superb meal! WOW! The flavor was nice and rich, and the meat was ridiculously tender. Continue Reading →

Woohoo! We have another all-star slow-cooker recipe on our hands! This was really labor intensive to put together, but it was oh so very worth it. I usually like slow-cooker recipes where you can just dump the ingredients into the slow cooker, turn it on, and go about your day. This one takes a lot of prep time…browning meat, sautéing veggies, thickening a spiced sauce…but it’s all about the layers of flavor here. Continue Reading →
