We haven’t made guacamole in a long time, so we decided to have some with our turkey tacos. We separated it into 2 bowls – one had some sour cream mixed into it and one didn’t. I’ve been loving my new Indian cookbook, and a lot of the recipes call for Ghee. I’ve never made it before, so I decided now would be the perfect time. The recipe says it only takes 15-20 minutes, but it took me more like an hour for it to fully melt and foam. It’s definitely something good to have around the house if you want to make a lot of Indian food. I wanted to find a homemade ranch dressing recipe, and this one didn’t even require a trip to the store! You have to remember to make it about a half hour ahead of time so that it has time to chill, but it’s totally worth it! It was fresh and free from MSG and other nastiness. It would be great jazzed up with some Parmesan cheese, too. I’m going to try the buttermilk variation next time. I put it on a salad of arugula, mushrooms, red onions, grape tomatoes, cucumber, cheddar and hard-boiled egg. Yum! Continue Reading →
