I made these recipes on Saturday for St. Patrick’s Day. They were both really good! The drink of the night was posted over at the CLBB and it was nice for someone like me who isn’t a big beer or champagne drinker. It made it different. The people who were really big Guiness fans weren’t too crazy about it though.
Mix equal amounts of chilled champagne and Guinness in a tall glass, drink while still bubbly!

The main course was working all day in the slow cooker. It couldn’t have been easier, and all I did was boil some potatoes and get out the good mustard and dinner was ready! This is definitely a repeater! The meat was so tender and flavorful. Dino’s dad usually makes the corned beef and cabbage, and this was my first attempt at it, and everyone LOVED it. The slow cooker saves the day once again!
Slow-Cooker Corned Beef and Cabbage
4 ½ lbs corned beef
2 onions, quartered
1 head cabbage, in small wedges
½ teaspoon pepper
3 tablespoons vinegar
3 tablespoons sugar
2 cups water
Combine ingredients in slow cooker with cabbage on top. Cut meat to fit, if necessary. Cover and cook on low 10-12 hours; high 6-7 hours or auto 6-8 hours.
